Default Good bait for eater flatheads?

Flatheads are about the only catfish I haven't caught much of, partly b/c they don't live where I grew up in York Co, SC.

Partly b/c of my own inexperience at flatheads. I have only caught one, and it hit a catalpa worm. It was about 5-8 pounds (ie, three to four servings)

I know they prefer live bait, but do the ones in the 10lb-or-less size take small live bait as easily as they might cut bait or nightcrawlers?

Are they more of a river cat or would a reservoir be a good place to try?
