Best NC Surf Fishing Beaches?

Hello Everyone,

I am new to NCangler and would love some help and advice on a few questions I have regarding surf fishing on the NC coast. I am 24 and my father has recently retired as a high school administrator after 30 years and has been stir crazy looking for something to occupy his free time. I have planned to take him surf fishing but have no idea which beaches and spots would be the best and most productive to fish. We have all our gear and tackle ready to go, but haven't chosen a destination yet. If anyone has a favorite beach or spot that has proven to yield great fish, I would love to hear of it and any other feedback on this matter from those caring to share!
In addition, after postponing our trip once because of the gas shortage and price increase scare and again because of Hurricane Ophelia, I am curious how soon after the Hurricane subsides will the water return to normal and the fish return to shallower waters. What is a good estimate on the amount of time I should wait to allow the water to settle and ensure an enjoyable and productive day or two of surf fishing after the Hurricane?
