Default AJ on the headboats-- tips?

I'd like to catch at least one amberjack, and I don't even care if it's a keeper. I just never caught one and would like to say that I did. We're going out on the Stacy at the end of May.

Do AJ's just hit the normal grouper fare (sardines, cigars, cut mullet, pinfish, etc..)? Are they bottom feeders like grouper?

As a side note, has anyone used cut stingray for grouper, AJ, and sharks? I've read on the net that they use stingrays in Fla for the big goliath grouper that live down there, I was curious folks have used it up here in the gulfstream for our varieties of groupah.
