Default multiple outboard question

One of the fishing shows last weekend featured a long distance trip from Miami to the Yucatan in a boat with Quad Vorado 300's mounted on the back (4 outboards - I think it was a Spanish Fly episode - it was Jose anyway). Just saw jlyons' post about having twin 135s (new to the game), which reminded me that I wanted to ask about multiple outboards.

Why is it that some offshore boats choose dual, triple or even quad outboards vs inboards or IOs (or even just higher powered outboards)?

Is it a multiple-redundant systems issue or more a cost/power issue (or something else)?
