      Blackened Catfish

    This is soooo... easy to make. Get yourself a heavy duty cast iron skillet. I have one of those gas turkey fryer frames that I use outdoors. This creates a lot of smoke. Heat the skillet up on the gas burner until it is almost white hot in the middle.

    You will need:

    4 catfish filets
    1 can of Tony Chacheres cajun spice...

    • Prepare a light breading with just flour, salt & cayenne
    • Clean and finely dice several cloves of garlic

    Posted as a fun fishing report (skunked, so had to use store-bought frozen fish in my stew-of-shame). Came out so good that its worth recording in the recipes section.

    Can be completed in less than an hour, if you skip the fishing part.

    King Mackeral can be a very oily and gamey tasting fish. A charter captain told me to soak the meat in Sun Drop, (yes the soda) for a couple of hours (or overnight) before cooking. You will end up with a very tasty piece of fish. I bread it after soaking in House Autrie seasoning and pan fry or deep fry. I will never throw another King away again.       Fish in Lemon Brown...

    4 Large Black Sea Bass Fillets (about 1 1/2 lbs)
    1 Stick butter
    1 Lemon, juiced
    2 garlic cloves, minced
    1 Shallot, diced
    1 oz raw almonds, chopped

    Heat butter in a frying pan pan over medium heat until melted and bubbly, then add shallot and garlic. Cook until soft, about 2 minutes, then increase heat to medium high.
