King Mackeral can be a very oily and gamey tasting fish. A charter captain told me to soak the meat in Sun Drop, (yes the soda) for a couple of hours (or overnight) before cooking. You will end up with a very tasty piece of fish. I bread it after soaking in House Autrie seasoning and pan fry or deep fry. I will never throw another King away again. CAUTION: If you put your fish and Sun Drop in a Ziplock bag DO NOT seal the bag. There is some reaction between the soda and the oil from the fish that will swell the bag up like a balloon and burst the bag. Trust me it is very messy in the refrigerator. Enjoy
