Well if you happen to have some Mahi Laying around this is a good recipe to try..

Take your Mahi fillets and cut it into steaks (Leave the skin on)
Get a container and drizzle olive oil in the bottom (I used the FoodLion pure Olive oil instead of extra virgin)
Put your steaks (skin side down) in and drizzle w/ the olive oil
Juice 1 lemon over top of the steaks
Season to taste w/ Basil, Garlic Powder, White Pepper (this is important use white it tastes better trust me)and just a little salt
Let set on counter for 30minutes - 1 hour
Put on hot grill skin side down
Let it cook al the way through (dont turn it) the top will be nice and white and the juices should be bubbling out of the side (try not to overcook as it make it DRY)

I could not upload pics of my dinner the pic file was to big but this is very similar just w/ eggplant instead
I served mine w/ Bushes baked beans, Uncle Bens wild rice pilaf and for an extra kick make some garlic bread but before you put it in the oven sprinkle it w/ Basil (AWESOME)
