      Smoked Salmon Wraps.

    My friend makes this anytime she has everyone over for a party. It's a great appetizer.

    4 oz. thin sliced smoked salmon
    1/4 c. whipped cream cheese ( she uses the 8 oz container)
    20 small fresh dill ( sprigs)
    20 fresh sugar snap peas

    1. separate the pieces of salmon carefully. spread slices with cream cheese.
    2. cut each slice of salmon into 3x1 in. strips. top each strip with dill. place 1 sugar snap pea crosswise on each strip; roll up.

      bass with cajon cream...

    season bass,"or any other fish or shrimp" with salt, pepper, and dash of cayenne then saute in olive oil til half done.
    add a couple tablespoons of lemon juice and reduce down, add half cup of heavy cream, dash or more of your favorite hot sauce and chopped parsley and continue reducing down til starts to thicken into sauce.
    serve with rice or noodles.

      Easy sauce for salmon

    Love salmon just about any way. If you are in a hurry, pan fry or broil a couple of steaks. You can mix up this sauce before the fish is done.

    Crushed Dill: 2 tsp to 2 tbl depending on your taste.
    Square of cream cheese that is room temp.
    Dash of salt (optional) and pepper.
    (Optional: 1 tbl of mayonnaise)

    Dump it all in a bowl and mix well.

    Put a dollop on the fish as it finishes cooking.

    Bring out the hoochbox and enjoy.

    Using either fresh water or saltwater trout, take the fillets (skin on) and pat them dry. Use salt and pepper to season. Place on a very hot grill, flesh side down for 30 seconds, turn (to get nice diamond grill marks) for 30 seconds more, then flip over. To prepare the dressing, render 1/4 # bacon until crispy.
