    Heres the Crappie Pattie recipe I mentioned earlier from the Crappie over the camp fire recipe. Again I apologize because I dont measure and I'm bad at spelling.
    • Crappie fillets left overs (or seasoned and cooked skinless fillets)
    • Bread crumbs
    • Eggs
    • Can of condenced milk
    • Large Zip-lock bag

    This is a great camping dish that can be made at home as well. I serve mine in the field with fried potato wedges and corn grilled in the husk

    You can use this “stuffing” technique with any thick fish fillet. I like to stuff Sea Trout fillets with cooked crab meat and or chopped cooked shrimp. Play around with the ingredients and come up with a stuffing concoction of your own

      Red Snapper with Basil...

    4 6-8 oz red snapper fillets with skin
    1 teaspoon salt
    1/2 teaspoon pepper
    3 tablespoons fresh lemon juice
    6 tablespoons olive oil
    1/3 cup thinly sliced fresh basil leaves

    Preheat broiler and oil a large shallow baking pan (1 inch deep).

    Season fish all over with 1/2 teaspoon salt and 1/4 teaspoon pepper, then put, skin sides down, in baking pan. Drizzle fillets with 1/2 tablespoon lemon juice and 1 tablespoon oil (total).

      Fried Bananas with honey

    A great addition to french toast or pancakes at breakfast as well just don't take any along on the boat.

    2 bananas
    1Tbsp honey mixed with one Tbsp warm water

    slice slightly green bananas place in hot pan with melted butter or lite olive oil. sear in one side for a minute or so and flip, as soon as all are flipped over pur the honey/water mix over the bananas and remove from heat. Sprinkle with cinnamon, powdered sugar, brown sugar or any combination of the above.

    -5-6 medium sized fish ~1'
    -2 cloves of garlic
    -1/4 cup corn oil
