      Blackened Catfish

    This is soooo... easy to make. Get yourself a heavy duty cast iron skillet. I have one of those gas turkey fryer frames that I use outdoors. This creates a lot of smoke. Heat the skillet up on the gas burner until it is almost white hot in the middle.

    You will need:

    4 catfish filets
    1 can of Tony Chacheres cajun spice...

    Got quite a few requests for my fish cake recipe so figured I'd share. I don't really use a recipe so it ain't easy for me to put this down in writing, but here goes.
    Can't give exact portions, I'll just give the method and some of my favorite ingredients. This is really easy and after a batch or two it's easy to get a feel for.

    Flour
    Eggs
    Milk
    Tony Chacheries Cajun Seasoning
    Lemon Pepper Seasoning
    Italian Style Bread Crumbs.

    Heat up deep fryer to chicken setting before you start to prepare the fish. Saves time...

    Man, what a meal. I thought I'd share this recipe with you guys that, yes, I dreamed up and made, and was I pleasantly surprised. BURP!..'scuse me.

    I took some silver snapper and grunt fillets and breaded them with this concoction, and just fried them as normal. Note that this recipe works GREAT for blackening as well, just skip the breadcrumbs and sear the fillet in a skillet.
