This is soooo... easy to make. Get yourself a heavy duty cast iron skillet. I have one of those gas turkey fryer frames that I use outdoors. This creates a lot of smoke. Heat the skillet up on the gas burner until it is almost white hot in the middle.

You will need:

4 catfish filets
1 can of Tony Chacheres cajun spice...
(I use Tony Chacheres cajun spice you can find it in most grocery stores and Wal-Marts).
1/2 cup of salt added butter

Melt a 1/2 cup of butter in a dish.
Dip the catfish filets in the melted butter.
Sprinkle each side of the filet liberally with the Tony's seasoning.
Drop the filet into the white hot skillet and cook for 2 to 3 minutes on each side.
Serve with lemon and fresh sliced tomatos. Wow! this is good stuff!!
