Heres the Crappie Pattie recipe I mentioned earlier from the Crappie over the camp fire recipe. Again I apologize because I dont measure and I'm bad at spelling.
  • Crappie fillets left overs (or seasoned and cooked skinless fillets)
  • Bread crumbs
  • Eggs
  • Can of condenced milk
  • Large Zip-lock bag
  1. Dump in the fillets into the Zip-lock, Season with salt and pepper if not done. If you made Crappie over the camp fire, throw in the cooked onions as well
  2. add about a handfull of bread crumbs, You can use more if you need to spread the meal.
  3. Drop in the eggs, about two eggs per handful of bread crumbs
  4. Pour in just enough condenced milk to make a batter a little thicker than pancake batter
  5. Get the skillet hot and use a little olive oil to fry with. Olive oil is great for skillet cooking over the camp fire because it has a high burn temp. No flamming skillets!!
  6. Use a spoon or pour the batter from the bag into the hot skillet. make the patties about 3 inches in diameter
  7. Let the patties sit for a minute and check the bottom with a spatula.
  8. Once the bootom is brown flip it
  9. Once cooked plate the patties
You can use the left over oil and condenced milk to make a white gravy
  1. Take the skillet off the fire and slowly pour the condeced milk into the skillet
  2. Constanly stir the milk until it thickens
  3. Season to taste with salt and pepper
  4. Pour the Gravy over the patties
This is another great camp fire recipe. If you dont have one already, I would invenst in a good pre-seasoned cast iron skillet that you can pick up at an outdoors store. Just be sure to wear some think all leather gloves wile handling the skillet.
