      Japanese Ginger Fish

    Japanese Ginger Fish

I got this recipe from a chef at a Scuba Diving conference in the mid 1980's in Raleigh. Folks who don't like fish will eat this. I've seen it many times and have prepared it with much success.

Firm fish fillets. I bet spanish would be great. Tallapia is an excellent choice when nothing is biting. Sea Mullet would be awesome!

Mix a marinade of white wine1/2 cup, soy sauce1/2 cup, prepared (wet) garlic 1 heaping tablespoon, and ginger root sliced and bruised a bit 1... [Read More]

      Low Country Cioppino

This is my adaptation of the well known San Francisco style Seafood Stew but using local NC seafood.

    4 cloves minced garlic
    1 fennel bulb, chopped
2 medium onions - finely chopped
    1 bay leaf
    1 teaspoon dried oregano
1 teaspoon dried thym... [Read More]

A great addition to french toast or pancakes at breakfast as well just don't take any along on the boat.

    2 bananas
1Tbsp honey mixed with one Tbsp warm water

slice slightly green bananas place in hot pan with melted butter or lite olive oil. sear in one side for a minute or so and flip, as soon as all are flipped over pur the honey/water mix over the bananas and remove from heat. Sprinkle with cinnamon, powdered sugar, brown sugar or any combination of the above.

      Flounder Nuggets

*Ammounts will vary and depend on size of fish.
    Flour
    Eggs
    Milk
    Tony Chacheries Cajun Seasoning
    Lemon Pepper Seasoning
    Italian Style Bread Crumbs.

Heat up deep fryer to chicken setting before you start to prepare the fish. Saves time...

    1. Mix about 2 Cups flour, 2 TBS of Cajun, 2 TBS of LPS, and around 1/2C of BreadCrumbs.
    2. In seperate bowl add 4 Eggs and a tad bit of milk... Just enough to make it have a uniform color.
    3. Put cut up fish into the Egg.
    4. Pull out a pice of egged fish and p

Thumbs up Grilled Mahi Down East...

278663518_d118a28c55 Well if you happen to have some Mahi Laying around this is a good recipe to try..

Take your Mahi fillets and cut it into steaks (Leave the skin on)
Get a container and drizzle olive oil in the bottom (I used the FoodLion pure Olive oil instead of extra virgin)
Put your steaks (skin side down) in and drizzle w/ the olive oil
Juice 1 lemon over top of the steaks
Season to taste w/ Basil, Garlic Powder, White Pepper (this is important use white it tastes better trust me;))and just a little salt<... [Read More]
