      Broccoli salad

    Broccoli Salad:
    1 large bunch of fresh Broccoli, cut up in small bite size pieces
    1/2 cup raisins
    1/2 cup Spanish Peanuts
    2 stalks celery, diced
    2 ounces real bacon bits (or 6 strips crispy bacon, crumbled)
    1 small red onion, diced

    Mix all ingredients in a large bowl

    Dressing:
    3/4 to 1 cup mayo (adjust as desired)
    1 tsp sugar
    1 tbs vinegar (I used red wine vinegar)

      KING MACKERAL

    King Mackeral can be a very oily and gamey tasting fish. A charter captain told me to soak the meat in Sun Drop, (yes the soda) for a couple of hours (or overnight) before cooking. You will end up with a very tasty piece of fish. I bread it after soaking in House Autrie seasoning and pan fry or deep fry. I will never throw another King away again.     Not many folks, including myself, though trigger fish would be a good fish to eat, but I'm here to tell ya, they are delicious!!!! If cooked the way I describe below, they'll taste just like lobster!! No joke.

    Though very tough to clean (i.e. dull up a fillet knife) with their tough skin, they are definately worth the time and effort.

    This one can be prepared with many different types of seafood, even chicken if the bite wasn't on.


    • Prepare a light breading with just flour, salt & cayenne
    • Clean and finely dice several cloves of garlic
    • Chop a handful of black olives

    Heres the Crappie Pattie recipe I mentioned earlier from the Crappie over the camp fire recipe. Again I apologize because I dont measure and I'm bad at spelling.
    • Crappie fillets left overs (or seasoned and cooked skinless fillets)
    • Bread crumbs
    • Eggs
    • Can of condenced milk
    • Large Zip-lock bag
