This one can be prepared with many different types of seafood, even chicken if the bite wasn't on.
- Prepare a light breading with just flour, salt & cayenne
- Clean and finely dice several cloves of garlic
- Chop a handful of black olives
- Bread your fillets, shrimp, scallops or thin slices of chicken breasts and drop them into hot olive oil
- As the fillets begin to brown toss in the olives
- Turn the fillets and add the rosemary and garlic
- When the fillets are browned on the second side pour in enough tart white wine to bring the juices nearly to the top of the fillets, but don't completely cover
- Simmer until the meat is just done (fish flakes)
- Plate the fillets over cooked pasta such as linguine or spaghetti
- Toss a chunk of butter into the sauce and reduce to desired thickness
- Spoon the sauce over the fish & pasta
