I've never fished Apex; I'd lean toward bond lake with cheap hot dogs for bait. Pick conditions where there's enough room for them to walk around at the base of the dam -- when the water's high there's no room for kids.

I always tried to take a frisbee or soccer ball as well -- maybe hide it in the trunk until they're done fishing...
