These are one of the best tasting fish IMO. The meat is all very white and personally I don't think even flounder taste as good.
We're there any with size? Like most fish of this shape there is a lot of rib cage. Get a few that are on the large side and even the head has good meat for fish stew/chowder. Boil the head and remove the flesh. Keep the broth and flesh and ditch the rest of the skull parts and you will have a feast. Even better after it cools and gets reheated as in leftovers.

Eric, it's only the giant Black Sea bass that are in California that are endangered, and I've hooked into a few of those too... I just haven't ever caught any of thier east coast cousins. But yea the biggest one I got was 16 inches they ranged from 11-15 mainly
