Good strategy.
I personally like #2 or 3 circle hooks on bottom rigs. Go from a #4 to 7 on a fish finder for larger baits. Can go larger depending on how optimistic you are.
Recently, I'm seeing:
mullet = blues
shrimp = whiting, pompano, flounder, and black drum.
Yet to catch a drum in the surf this fall but fresh cut bait should be catching them.
Also, you'd be surprised what you can catch on a #3 hook and how tiny it looks in a big red's mouth.
Smaller hooks are going to land more fish but can only hold so much bait. My experience, bigger baits yields bigger fish, but less fish.
